Heavenly Onion Rings


Who doesn't love onion rings?!? Who doesn't love beer?!?
I think it's always possible to have the best of both worlds.

I've tried making onion rings a few times, and this is 100% the method I enjoy the most. 
There are other recipes which include a flour, egg, breadcrumb process... That may be healthier... But it's not nearly as easy or tasty. 
In this recipe we are going to make a batter out of flour, beer and milk...and then just fry!
Way less time consuming too. 

Ingredients:

2-2 1/2 Cups of Flour... I used 2 1/2 Cups, the consistency was a bit too watery at 2 Cups, but you should check at 2.
2 Yellow Onions
3 Tablespoons Paprika
3 Tablespoons Garlic Powder
2 Tablespoons Basil
Pepper to taste
Smoked Salt to taste
Vegetable Oil
1/2 Cup Milk 
1 Cup Beer (I used Lil Heaven Session IPA from Two Roads Brewing) 
You can substitute any beer you want... Stouts and milk stouts would be fun to experiment with,
Porters,yam and pumpkin beers, sessions and even lagers. I really would just stay away from fruit beers, sours and double IPAs. That's just my opinion... I feel like the fruitiness in a fruit beer would contradict the spices in the batter, double IPAs have a strong hop back bone that could get a little bit overwhelming and overpower all other flavors, and sours I just wouldn't taste right with the milky, spicy, smoked flavor you get from this recipe. 
Alllllrightyyy, moving on.


Directions:

Combine spices and flour in a medium bowl.


Mix together and then add beer and milk.


Mix and set aside.

Slice your onions. I did mine about 1/3" but I'm not picky on being exact with these-variation is fun sometimes.


Set aside.
You need a large pot at this point. I filled mine with 2-3" of vegetable oil and set the stovetop to a medium high heat. Once the oil gets to 350 I lowered to a medium heat and started.

Dip each onion ring in the batter, make sure to shake off and then set in frying oil.
Let cook until lite brown.


Line a baking sheet with two layers of paper towels.
Remove from onions from oil and transfer on to baking sheet.
Immediately season again with salt and the dip back in batter...shake off...and place bake into your pot for a second round of frying. 
Oh no...
Oh yessssssssss.



The second coating really makes the difference. 
These turn out great looking and great tasting!!
